The cheese you see in the photo above has been slowly maturing in our cheese store since Spring 2022. It was something of an experiment with the ‘skinny’ (lower fat) milk our cows produce in early spring. We knew that parmesan cheese is made with skimmed milk, so we wondered whether our skinny milk could produce a cheese that was similar. Two and a half years later, we reckon this cheese is finally ready. Named Batch 22, because it was made in 2022, this is a dry, hard cheese designed for grating. It has a deep flavour, almost like a stronger, drier Carrick, and it is a genuine one-off, available only while this batch lasts.It’s been a long wait for this newsletter too – our apologies for the reduced frequency of news from us. If you follow us on social media you’ll have noticed posts about technical issues with some of our emails, which also affected access to our newsletter. Everything is sorted now, and it’s lovely to be able to send our news to your inbox once again. |
Christmas orders
If you’re planning ahead, our online cheese shop is now fully stocked with all the products we will have available for delivery before Christmas. Our final deliveries will take place on 16th and 17th December, which means our final order deadline is 9am on 14th December.
