This is a fascinating hand-crafted product and the perfect addition for a caring chef’s kitchen. This is undoubtedly of the land. Only on Orkney are they growing and milling the ancient six row barley they call Bere, that is so special – and tasty – it is recognised on Slow Food’s Ark of Taste.
Sam and his family have created this craft malt vinegar by hand in small batches on Orkney, So far they have 2 in their range: Bere Vinegar and Meadowsweet, using organic meadowsweet for the neighbouring farm (pictured), however there are more flavours in development stages!
These isles are steeped in Neolithic history, and incredible to visit, with lovely places to stay. Bere Barley can be traced back 5000 years and the vinegar is brewed using solely traditional methods from 100% malted Bere, that, combined with ageing in oak barrels, imparts a deep and complex flavour behind the acidity.
