I first met Thule Ventus at the Taste of Shetland Food Festival and found their salt cod pate delicious. It is available now in tubs and perfect for dips, canapés, and on oatcakes.
Their pure dried salt cod is excellent too. Shetlanders have been drying fish for centuries and indeed dried salt cod is on Slow Food Ark of Taste as a heritage food. In the past Shetland even exported it to fulfil the high demand of the Basque bacalao market.
Thule Ventus has used these traditional techniques along with modern filleting methods to create a top notch product in their family business. They only buy from local family owned boats, landing at Shetland fishmarket and all are MSC certified sustainable.
Thule Ventus is named after Ultima Thule the name the Romans gave the islands farthest north and Ventus, Latin for wind.
Not everyone is sure how to cook this product these days however recipes will go up soon in the recipe section – it would have been regularly eaten in the past and it is about time we enjoyed this tasty and versatile product again.
