This fabulous Native Shetland Kye, farmed on Uradale by the Eunson family, is on Slow Food’s International Ark of Taste as a heritage food to be treasured and enjoyed. Available locally on Shetland & by mail order. We buy it regularly and it’s absolutely delicious.
Instructions
  1. Season beef with Scottish salt, milled black pepper, garlic, rosemary and olive oil (or Scottish rapeseed oil) on the top.
  2. Roast, covered, for 1 1/2 – 2 hours at gas 6 (200°C).
  3. Cut thin slices of roast beef with some salad and a bit of sauce, possibly cheese… delicious! And you can thank Mrs Eunson for it!
