Orkney Boreray Mutton Available
I am delighted that we once again have the opportunity to sell Orkney Boreray Mutton. This absolutely unique breed of sheep is distinct from other Boreray breeds and encompasses the Orkney terroir where they are raised.
Left to grow slowly on salt sprayed island pasture and moorland, the meat develops a depth of flavour you simply can’t beat; sweet, faintly gamey, nutty, and beautifully tender. It’s an official Slow Food Presidium product, and we’re proud to to be involved with this amazing project to reestablish this ancient of breeds.
