Wild Hearth Bakery opened their Comrie Main Street for award-winning sourdoughs, pastries & coffees-to-go in 2024. This is the first time John has had a retail emporium and he still has his main production along the road at the Cultybraggan Camp.
Tortano (potato crowns) pictured won Reserve Champion at Scottish Bread Champion 2024 plus many Golds awarded. Joint Supreme Champion 2022, Double Scottish Bread Championship Champion at Royal Highland Show 2021, and Champion 2019 & multi Gold Award Winner in 2023. Slow Food Scotland Bakery of the Year 2021.Wild Hearth Bakery is an exceptional wood-fired artisan bakery on the edge of the highlands created by John Castley, Baker & Founder.
Most recently Wild Hearth also won Best in Show 2025 at the inaugural Border Union Show Bread Competition, judged on the same Real Bread criteria of the Scottish Championship.
All John’s breads are created slowly, using nature and natural ingredients. They take many long hours to ferment resulting in fabulous flavours throughout his extensive range of loaves, and specialities including ciabatta, pastries and croissants. There are also seasonal specials – stollen, seriously fruit & sesame & panettone, for example.

The Cultybraggan community where these wonderful breads are made is collection of up-cycled WW2 Nissen Huts accommodating a range of enterprises alongside a colourful and plentiful array of allotments, one of which has a selection of heritage grains that John has planted that Comrie Primary School is visiting to see its progress from soil to sandwich. This bread & grains project is bringing the journey bread makes from seed to plate to life, and interactive for the primary pupils. A very exciting project.
