Lamb is lovely but it is nothing compared to the majesty that is Hogget!
Ryeland hogget is meat from a slow-grown Ryeland sheep that is between one and two years old. Highly prized by butchers and chefs, the heritage breed was historically dubbed the “sweet meat of Herefordshire”. It offers a richer, more intense flavor than spring lamb but is more tender and mild than older mutton. Because the slow-grown Ryeland breed develops on a natural grass diet, hogget produces well-marbled, lean meat that contains high-quality protein and beneficial heart-healthy fats. It is a versatile alternative to standard lamb and is an excellent choice for slow-roasted shoulder, barbecue cutlets, or leg steaks.
Here at Elchies we rear pure Ryelands for hogget and, killing out at 36-50months, multi award winning Ryeland mutton. Fresh hogget can be found in the shop right now and Ryeland mutton is hanging in the chiller.
Our mutton is hung for 21days to evaporate the excess moisture which then intensifies the natural rich flavour of the meat and creates a much more tender, melt-in-the-mouth texture.
