This is the time of year when we have milk with a lower butterfat than normal, so we have been making Skinny Red and Skinny Gold recently. These batches of Skinny Red will take almost the whole of 2024 to mature – we expect them to be ready for Christmas orders! If you can’t wait that long, we have a very small number of wedges remaining from last year’s Skinny Red batches currently available in our online shop. We also have a fresh batch of Bluebell that’s now available to order for delivery from late March. The cows and calves are still indoors enjoying thier winter diet of silage – fermented organic pasture that was cut last summer. In this part of Scotland it will be at least another month before the grass is long enough for them to head out to pasture again. Before then, we are looking forward to welcoming lots of newborns to the farm as our spring calving block is about to begin.
