Hemp seed rolls

Hemp seed rolls

In Scotland it can be challenging to source fresh yeast so I sometimes have to use fast action dried yeast although these days I am less keen as it contains additives I would prefer not to encourage. Indeed for the Scottish Bread Championship 2026, the criteria will include only sourdough and fresh yeast, not dried. We have just returned from a fascinating visit to Hemp It Up in Angus where they are creating products from their homegrown hemp: original and flavoured oils, powders and hearts, scented soaps and environmental packaging, with more ideas on the way. Nutritious and versatile, I decided to try adding it to my original bread rolls with delicious results. The addition of hemp to dishes adds interest and flavours, enhancing the nutritional value along the way. Hemp grows quickly and thrives in Scotland’s climate, making it an attractive and sustainable ingredient for any cook’s larder.

Instructions
  1. Crumble yeast in the warmed water/whey with a pinch of brown sugar and set aside to froth.
  2. Add yeast, along with oil, to the dry ingredients, flour, hemp powder and salt, in a generous sized mixing bowl.
  3. Mix to a soft dough, adding a little extra water if the mixture is too dry.
  4. Gather the dough together with your hand and knead on a lightly floured surface for 10 minutes until the dough is smooth.
  5. When kneaded, divide dough and shape as desired. This quantity makes 8 good sized rolls.
  6. Slash with a sharp knife. Set on baking tray, lined with parchment, in a warm place until they have doubled in size.
  7. Brush lightly with water and sprinkle with hemp hearts before baking in a pre-heated oven at 220°C for 15-20 minutes until they have an attractive crust and sound hollow underneath when tapped.
