Welcome to our new Member (Dec23) …Anne Keenan is The Culinary Kiwi Bird, an award-winning Artisan Baker & Chef. Reserve Champion, Scottish Bread Championship 2023. Anne specialises in crafting sourdoughs, real breads and authentic viennoisserie. This micro bakery punches well above its weight, creating a wonderful range of products to order and for local farmers’ markets: from Beremeal Boule (her award-winning loaf) to home made granola, New York Deli Rye and Plum & Ginger Crumble Danish. Anne also creates a range of mouth-watering croissants.
Her Beremeal Boule delighted judges and public alike with her successful use of heritage Scottish grains; not a simple task but worth the effort. Anne focusses on high quality Scottish ingredients, often with unusual flavour combinations such as her popular pandan & coconut croissants, charcoal & sesame sourdoughs, green tea tarts and other intriguing combos. She also collaborates with local distillers, adding a wee dram where appropriate to her creations. Her amazing almond croissants are her most requested pastry, Anne says, “It must be all the booze I manage to get into it!”
Anne is a double distinction classically trained Chef/Baker graduate from the Tante Marie Culinary Academy. Originally from the land of Kiwis, she has been based in UK since the 80’s
“My sourdoughs are made with predominantly organic Scottish flours from Mungoswells North Berwick and Bere Meal from Barony Mill, Orkney. My pastries are made with the best French pastry flour from Foricher Moulins and organic pastry flour from Shipton Mill, with butter from The Edinburgh Butter Company. My salt comes from Blackthorn Salt over in Ayrshire. Everything is handcrafted by me in my home based micro-bakery. As for other ingredients, I try to keep it as local and as seasonal as possible and am a fully paid up supporter of the Real Bread Campaign.”
