Ingredients
- Liquid mix…
- 150 mls warmed milk
- 50 g plain flour
- 2 sachets dried yeast
- 1 tsp sugar
- Dry mix…
- 200 g strong bread flour 50-50 white & Scotland The Bread
- 1 tsp salt
- 2 tsps sugar
- …plus…
- 25 g softened butter
- 1 egg
- Filling…
- 50 g butter
- 50 g soft brown sugar
- 2 tsps cinnamon
- 50 g dried fruit – sultanas/ currants/ mixed peel
- Topping…
- 100 g icing sugar
- 1 tsp Just Fruit Blackcurrant
- boiling water
- Glace cherries to decorate

Instructions
- Blend liquid mix together and allow to stand in a warm place until frothy.
- Rub the 25g butter into dry mix and add all liquid, plus egg, at once. Mix to a soft dough.
- Knead for 5 minutes and roll out on a sheet of baking parchment to a big rectangle.
- Wet all edges, smear remainder with dabs of butter and sprinkle with sugar, fruit and spice mix.
- Roll up lengthways like a Swiss roll.
- Bring the dampened ends together to form a ring and push together inwards to form a heart. (see photo)
- Gently slide paper and heart onto a baking tray and use scissors to snip the ring at regular intervals.
- Allow to prove for approx. 30 minutes.
- Bake for 30 minutes in a pre- heated oven at 190 C.
- For icing, very carefully add water to the icing sugar and dried blackcurrant and stir until a thick coating consistency. Spoon onto cooling loaf and decorate with glace cherries.
Recipe Notes
Best eaten within 2 days but can be frozen undecorated. Serves 6-8
