Briggs describes himself as a Shetland sheep breeder with a mainland outpost! He sells whole pure bred Shetland lamb and mutton, fresh butchered, chilled and packed suitable for home freezing by direct retail. No shop onsite.
It is greatly appreciated by discerning chefs who appreciate the fantastic flavour of heritage breeds. All the lambs are traceable, born and raised on their 10 acre smallholding. The mutton and hogget is from ewes on the holding and from their flock on the Shetland Isles.
The carcass size is small and the meat is so flavoursome it is world class, for the meat takes on the flavours and spice of the herbs and flora of the landscape. Look out for this Briggs Hogget slow cooked with seasonal vegetables and local Beer in the recipe section. Shetland Lamb has PDO status and is on Slow Food’s Ark of Taste.
