This award-winning bakery is the brainchild of 5 directors: chef Ben Reade, Duncan and Amy Findlater who own Smith & Gertrude, Hollie Love Reid who owns Nice Times Bakery and Lovecrumbs, and Sashana Souza Zanella. Rather a supergroup with everyone bringing their own expertise to the table to get it started! Ben and Duncan run it day to day, but Hollie is also involved.
Ben’s dedication to provenance extends not only to carefully sourcing specific flours and grains for his delicious nutritious loaves but also milling much of it in-house to ensure exactly the product he desires. There is a great range of loaves from wholegrain to focaccia, baguettes to rye breads and multiseed all available via the online shop for wholesale and home delivery in Edinburgh. They also minimise their use of plastic and collaborate to reach zero-waste in all they achieve. Ben is a trailblazer and many local restaurateurs appreciate and regularly order his loaves.
Based in Haymarket it is not a full-time retail outlet but a hive of activity where sourdoughs are made by his creative and skilful team as proven when they excelled at the Scottish Bread Championship.
They now also have a pop up market 4 days a week at their Haymarket bakery (check website for changing opening hours).
