The Incorporation of Bakers “Baxters’ of the City of Edinburgh is one of the Edinburgh Trades – existing since mediaeval times to promote the interests of specialist crafts and skills. The Incorporation of Bakers is now attracting new members and wants to help and promote high quality baking in Edinburgh. Given the origins of the Incorporated Trades it is arguably a very appropriate time to band together to resist deskilling, industrialization, Chorleywood bread process, not to mention all the additives and fast reactors that artisan breadmakers abhor.
It is an honour to be a Trustee of the Guild of Baxters (Bakers) and Chair of the Edinburgh Bakers Trust. The intention is to revitalise and create interest among artisan bakers. The Incorporated Trades of Edinburgh is steeped in tradition and history and led by an elected Deacon and Boxmaster. There were 15 Incorporations: Surgeons, Goldsmiths, Skinners, Furriers, Hammermen, Wrights, Masons, Tailors, Baxters, Fleshers, Cordiners, Weavers, Waulkers, Bonnetmakers & Dyers, Candlemakers and Barbers.
