The quality of produce and its provenance is at the heart of everything you experience here at Fhior, Scott & Laura Smith’s wonderful dining venue on Broughton Street. Fhior is an adaptation of the word for ‘true’ in Gaelic. Scott’s culinary style is honest and skilled as he seeks out and sources the best Scotland has to offer.
Scott goes that extra mile for everything he prepares in his kitchen and is inspiring to talk to with skills to match. He also engages personally with producers, ensuring he knows his produce inside out, also inviting them to speak on occasion at Fhior, such as his North Ronaldsay Mutton event.
The dishes pictured include sustainably sourced seafood, heritage mutton and beef, asparagus (when in season of course, with photo taken in May). The seasons are as important to Scott as the produce and the flavours of his dishes are superb, reflecting his skills in combining ingredients.
In 2020 Scott launched the Fhior Kitchen Garden so even more of his fruit and vegetables are homegrown as well as seasonal, with many heritage varietals on Slow Food’s Ark of Taste, all packed with flavour and freshly harvested.
Experience Scott’s full dinner tasting menu of seven or ten courses or opt for a four-course set lunch option – either way you will have a wonderful meal to remember. His wine list is also from small-scale producers so is interesting and refreshing.
