Strawberries stuffed with Fraiser syllabub

Instructions
  1. Rinse strawberries and slice off stalk, taking care to leave a flat base but not to lose any of the berry!
  2. Using a balloon whisk, whip up cream and until soft and floppy, just holding its shape, then drizzle in sufficient Fraiser Whisky Liqueur to make a syllabub - the cream will hold a couple of measures of liqueur and still be a piping consistency.
  3. Place strawberries flat side down and cut a cross, half way down, on the top of each.
  4. Part the cuts gently and pipe the syllabub into the gap for a very pretty treat.
  5. Scatter with hazelnuts and serve.

Hemp seed rolls

In Scotland it can be challenging to source fresh yeast so I sometimes have to use fast action dried yeast although these days I am less keen as it contains additives I would prefer not to encourage. Indeed for the Scottish Bread Championship 2026, the criteria will include only sourdough and fresh yeast, not dried.

Nutritious and versatile, I decided to try adding it to my original bread rolls with delicious results. The addition of hemp to dishes adds interest and flavours, enhancing the nutritional value along the way. Hemp grows quickly and thrives in Scotland’s climate, making it an attractive and sustainable ingredient for any cook’s larder.
