  1. Pre-heat oven 180°C
  2. Butter an ovenware dish.
  3. Melt butter, add flour and stir with wooden spoon. Gradually beat in milk (roux sauce method) with a balloon whisk and bring through boil resulting in a very thick sauce.
  4. Remove from heat and allow to cool a little. Stir in eggs yolks, cheese and seasoning.
  5. Whisk egg whites stiff and fold in to cheese mixture with a metal spoon or spatula.
  6. Spoon into dish and bake for approx 20mins until well risen and golden crusted.
  7. Serve immediately.
Recipe Notes

Alternatively cook for longer in a large soufflé dish and it will serve 3/4 as a main dish with salad and wholemeal bread.

Hemp seed rolls

In Scotland it can be challenging to source fresh yeast so I sometimes have to use fast action dried yeast although these days I am less keen as it contains additives I would prefer not to encourage. Indeed for the Scottish Bread Championship 2026, the criteria will include only sourdough and fresh yeast, not dried.

Nutritious and versatile, I decided to try adding it to my original bread rolls with delicious results. The addition of hemp to dishes adds interest and flavours, enhancing the nutritional value along the way. Hemp grows quickly and thrives in Scotland’s climate, making it an attractive and sustainable ingredient for any cook’s larder.
